What’s the purpose of Blanching the Broccoli Do?

Blanching refers to short-term cooking of an ingredient in boiling water prior to adding it to the pan. In this particular dish, the blanching allows the broccoli to cook without drying or withering it out. Then, you can cook it in the skillet however, you won’t need cook it for the same amount of time before it’s cooked. Blanching is also a way to make the colors pop in green vegetables. Therefore, your broccoli and beef will appear prettier when the broccoli is blanched.

How to make Beef and Broccoli

The fun part is here! Let’s start cooking this delicious dish.

  • The beef should be marinated. Mix together low-sodium soy sauce, dark sauce and toasted sesame oil. Add pepper, and cornstarch. The beef is cut into slices and then add it to the mix. Allow it to sit for at the minimum 10 minutes.
  • The broccoli should be blanched. Bring the water to the point of boiling. Cook the broccoli for 30 second, after which wash and drain using cold water.
  • Create the dish. Combine oyster sauce low-sodium soy sauce the dark sauce soy, broth of chicken mirin and toasted sesame oil. Add cornstarch, sugar, salt, black pepper and mix.
  • The beef should be cooked. Heat a non-stick pan or wok on high heat and then add the oil. Once the oil has reached a temperature of smoking it is time to add the meat in one layer. Add the garlic to cook till the beef is not pink anymore.
  • The stir-fry is now ready to be served. Add the sauce then stir it until it thickens, around 30 seconds. Add the broccoli and toss until the veggies and beef are coated in sauce. Add salt and pepper as required.
  • Serve. Add any garnishes you’d like (I love sesame seeds as well as green onions) and serve the broccoli and beef over noodles or rice.

Tips to be Successful

Here are some tips and suggestions to ensure that your broccoli and beef turn out perfect.

  • The pan should be extremely warm. You’ll want to activate your fan when you cook this. Cook the pan over high heat until it’s hot. Then you can add oil, and beef. This will guarantee that you’ll have a nice crust on the meat that will give flavor and texture to the dish.
  • Cut the beef into thin slices. It’s very important to cut the steak to thin strips. Thinly-sliced steaks are more tender, particularly with this stir-fry technique.
  • Slice the meat in half across to the grain. You always want to cut your steak across the grain, however this is particularly important for cuts that are lean such as sirloin or flank steak. Cutting the beef across the grain helps keep it from becoming chewy.
