Carrot Cake Loaf

  • 8. 1 oz milk-free soft cheese may be substituted for regular cream cheese if it is not dairy-free
  • 3 3 tablespoons refined, soft coconut oil is a good substitute for butter, if dairy-free
  • 3-4 tbsp maple syrup or Lakanto sugar free maple syrup
  • 2/3 tsp vanilla extract
  • chopped pecans or walnuts for garnish

Instructions

Carrot Cake Bars

  1. Preheat the oven to 350 F. Line an 8×8 baking pan with parchment, leaving the excess overhang.

  2. In a bowl large enough prepare flax eggs by mixing the ground flaxseeds and water. Then let it sit for 5 minutes until it becomes thicker and changes to the texture of jelly.

    Mix maple syrup with coconut oil, sugar and vanilla, and stir until it is all combined.

  3. Set a large mesh sieve over the bowl. mix in coconut flour, almond flour, baking powder spices and salt. Mix well until it is all combined, without lumps.

    Incorporate your grated carrots, nuts or raisins, if your preference is to include the latter. Transfer the batter into your loaf pan that is lined.

  4. Place the batter in the baking dish you have prepared and make sure the batter is evenly distributed using an ice cube or the back of the spoon.

    Bake for 22-25 minutes or until it is fully set. A toothpick is clean. After baking, let it cool completely prior to frosting.

Cream Cheese Frosting

  1. Combine all of the frosting ingredients using an offset spatula to spread the frosting the frosting over the cooled loaf. Sprinkle it with chopped nuts should you like.
